Since I first wrote this post I have discovered the 5 minute bread recipe and now use that for a pizza base. It can be used without any resting, so straight out of the fridge. I find that it cooks best when full loaded with toppings etc. and left to rest for a bit.

2 1/2 cups flour,
3 tsp dried yeast,
1 tsp salt,
glug of oil

My Thinner Pizza Base
Pizza dough
1 cup plus 2 tbsp warm water
2 tbsp olive oil
3 cups flour
2tsp yeast
2 tsp sugar
1 tsp salt
