Heat oven to 180c
Serves 6 (I freeze half and feed the 3 of us)
500g sausage meat
2 onions – finely diced
1 egg lightly beaten
1 teaspoon curry powder
2 sprigs parsley – chopped
3/4 cup breadcrumbs OR ½ cup oats
1/2 cup milk
1/2 cup water
1 cup tomato sauce
1/4 cup Worcestershire sauce
1 teaspoon coffee powder (granulated is fine)
1/4 cup brown sugar
3/4 cup water and a few drops lemon juice
Combine sausage meat, mince, onions, egg, curry powder and parsley. Mix well.
Add breadcrumbs/ oats and mix again.
Add the liquids, mix again.
Here you can either cook as one large meal for 6, it does make good sandwiches the next day or cook half and freeze half.
Splodge mix onto a roasting dish and make into a brick shape. Cook for 30 minutes for large portion or 20 minutes for half size.
While it is cooking, make the sauce. I make the full amount even when cooking the half portion. I keep some back for pouring on the plate.
Combine all the ingredients in a small pan and simmer for 5 minutes.
After 20/30 minutes pour sauce over the loaf
Baste frequently and cook for a further 30/40 minutes.
