Eggplant chicken meatballs with Tzatziki

Us adults really enjoyed this, Miss wasn’t so sure. I served it with brown rice and ready made tzatziki as we already had it. Also, I added more flavour to the meatball mix than was in the recipe as I find chicken mince can be very bland. I will write my recipe out and my tweaks.
 olive oil (enough to cover pan base)
1/2 medium eggplant chopped into 1cm squares
1/2 onion finely chopped
1 garlic clove finely chopped
480 g lean chicken mince
1 teaspoon lemon zest
1 tablespoon finely chopped herb (rosemary/basil etc)
salt and pepper to taste
1 tin of flavoured tomatoes 
heat pan with olive oil,
add eggplant and cook until soft (add hot water if sticking)
just before it is complete mush add onion and garlic
leave to cool
place chicken mince into a bowl, add eggplant mix and stir
make walnut size meatballs and fry until brown
carefully pour tinned tomatoes over the balls
simmer gently for 20 minutes
I served with ready made Tzatziki as it is cheaper than buying the bits to make, brown rice and some bread.

We had this as a grown up meal to use the rest of the eggplant up as I only used 1/2 for the previous dish. I also added some garlic and chorizo. It was very tasty and is another keeper.
