I had never heard of this recipe before we came to New Zealand and I must confess to still finding it rather novel. As you can see I did 2 different ends but cooked them all together.

All 3 of us enjoyed it and it will become more of a staple use bits up dinner
Self-crusting Quiche / Impossible Pie Muffinmum.com
1 can (450g) or roughly 1 1/2c frozen corn
1/4-1/2 c chopped spring onion
1/2- 1 cup tasty cheese
1/2 c self raising flour
3/4c milk
2 large eggs
3 firm tomatoes sliced- optional
Pre heat-Oven 200c
Grease 20-23cm solid bottomed round tin.
Arrange corn, onion and cheese over base of tin
Whisk milk and egg togther
Pour over corn mix
Arrange optional tomato on top
Bake for 25-30 minutes until centre is set and top golden
