Please excuse me, this is my first post using the lap top as our PC died.As you can see, I went back to making the faithful old muffin today. No friand, no cupcake or fancy cake.
I have always used a basic recipe and then just added what ever came to hand. Today it was some frozen raspberries and a small bar of milk/ white chocolate bubbly. This did only yield 8 small muffins so if you need more, double or triple the recipe as it shouldn’t matter. Muffins do not last many days any way. Two vanished almost as soon as they were out of the oven.
Put oven on 180 and grease the tin you plan on using. I just use oil spray.
Dry
1 1/2 cups self raising flour
3/4 cup white sugar
1 tsp cinnamon
pinch of salt
Wet
1/3 cup canola or other not too flavoured oil
1 egg
around 1/3 cup milk
1 cup frozen raspberries or other fruit
Method
Put all dry ingredients in a big bowl
Measure oil in a cup measure, break egg into cup and top up to 1 cup with the milk
Add the 1 cup of wet ingredients to the dry ingredients bowl
Stir until just mixed
Add your chosen extras and stir those in
Place equal blobs into your tin
Bake until golden and they smell good
