Coconut cake, strawberries and The Collective mango.

A little while ago there was a story on 3 news about a beautiful grandmother, Connie. She had made her Olympic competing grandson his favourite cake for his return. The simplicity of the cake has puzzled me and I just had to make it.
I would call it more of a pudding than a cake. It would go well with custard or ice cream. My current food must have went very, very well with it. That favourite is Mango yoghurt from The Collective. You can get their yoghurt in the UK too. It really is very good.

Connie's Coconut Cake-

  • Servings: medium loaf tin size
  • Print

2 cups of milk
2 cups of desiccated coconut
2 cups of self-raising flour
1 cup of sugar

Mix milk and coconut and leave to soak for one hour.
Add self-raising flour and  sugar.
Mix and bake at 190 degrees for 1 hour.
