Another use for the mini muffin tin, I have only ever used it for mince pies. Now I can make these babies. I made these for my husband’s turn of baking for work. They are good and I am saving these in my brain bank for shared lunches, work mistake fines and any other occasion I can think of.
I based this recipe on a search for all things Nutella and the original concept was on baked-in.com . This recipe called for room temperature Nutella. Many others suggest lining a baking tray with greaseproof paper and dolloping the Nutella onto it, then freezing. I think I will use frozen dollops next time.
This mix made plenty for a 20 hole mini-tin. I made a couple of larger ones too. I think I will get another mini-tin and can probably get 30 out of it.
I used 180 gram of a bar of Cadbury Dairy Milk chopped into roughly the size of rice crispies.
My mini-tin has silicone inserts, if yours doesn’t use paper liners or give a light spray with oil.

Oven on 180°C or 160°C on fan bake
120 grm butter at room temp (if using unsalted add 1/4 tsp salt)
1 c of light brown sugar (packed into cup)
2 eggs lightly beaten
1 tsp vanilla extract
1 1/2 c plain flour
1 tsp baking powder
1 c of chocolate chopped into small pieces
1 c Nutella
Beat butter and sugar until light and fluffy
Add half of egg mix and mix
Mix in remaining egg and vanilla extract
Add flour and baking powder and mix
Fold in chocolate chips
Place a heaped tsp of mix until you have used 2/3 of mix
Place 1/2 tsp of Nutella on the middle of each batter
Put remaining batter on top
Bake for 10-15 mins until just browning
Leave to cool before removing and placing on a cool rack
